Double chocolate brownies

Tried this recipe the other day. They didn’t last long!

Ingredients: 175g Unsalted Butter 250g Quality Dark Chocolate 3 Large Eggs 1tsp Vanilla Extract (please don’t use essence!) 150g Plain Flour 150g Walnuts or Pecans – roughly chopped 200g Choc Chips.

(I didn’t have any choc chips so settled for some dried cranberries – which worked amazingly well!)

Method:

Heat the oven to 180C/160c fan/gas 4. Line a 30cm x 20cm (12in x 8in) tin with baking parchment and rub a little butter on it.

Melt the butter and dark chocolate together in a bowl (in a microwave oven or over a pan of hot water. Stir until smooth and then leave to cool a little.

Whisk the sugar with the eggs until pale and thickened. Mix in the vanilla and melted butter/choc mix. Add the flour (sieve if you like) by folding it into the batter, then add the choc chips (or fruit) and nuts. Pour the mix into the baking tin and bake for 35 minutes or until JUST cooked.

Allow to cool in the tin, then cut into squares. Should make 18.

We had the grandkids round and we had to restrict their intake! They’d have demolished them otherwise.

Wonderfully indulgent – try a bigger piece with a dollop of farmhouse dairy icecream. Mmmm
